We have run into the same issue, so we wrote a script that overwrites
the previous backup. We run it weekly.

We own System Center Enterprise Suite, so we are going to switch over to
System Center Data Protection Manager for 2008, Symantec's NetBackUp
still doesn't support 2008. So we had to find alternatives. I h am
hoping we can shove NetBackUp right out the door.
