I am working to deploy MOSS in server 2008 64bit. What did you do to
get past the compatibility issue

I just deployed this scenario. I created a slipstream CD with MOSS 2007 x64
along with MOSS 07 SP1 and WSS 3.0 SP1. Both are requirements.
