I need to have separate namespaces and schema. What domain model
should I use?
From what I have figgured out the only model that supports this is
Cross-forest trust, because all other methods the DCs will
replicate/update the schema. Also the namespaces.

Different Schemas require different Forests, so is correct that you
cannot all domains in the same forest. I'd create two forests and have
them join a Forest Trust.

To have a seperate schema you will need to build an additional forest
and setup a forest to forest trust.

both forest must be 2003 forest function level (or 2008)

As said from the others, different schemas require different forests.
